Nutrition and Culinary Workshop Materials and Resources

Welcome to the Cooking for a Healthy Future Culinary Workshop page. The curriculum for the workshop is provided in partnership with LuckJunky Consulting and USDA Team Nutrition, and is funded in part with federal funds from the U.S. Department of Agriculture.

  • This FREE, 8-hour workshop is open to all CACFP participants. The workshop is designed for cooks, assistant cooks, nutrition and/or dietary specialists, and center directors. However, all personnel are welcome to attend.
  • The workshop will focus on culinary techniques and hands-on experience with Chef LJ Klink, an award-winning culinary expert with a passion for cooking in the interest of kids! He will lead participants through a variety of labs covering topics such as knife skills, pasta, vegetable production and garnishing, Stealth Health, grains and more!
  • STARS credits will be available to all participants.
  • Workshops will be limited to 20 participants so register early to secure your spot in this one-of-a kind workshop experience! This workshop will not be repeated in the future, so plan on attending this year. For ideas on how to cover the absence of your cook or other personnel, please contact your administrative program specialist at OSPI.

LJ KlinkAbout the Chef
Jerald Klinkenberg, more commonly known as “LJ Klink” is the original Rock Star Chef and captured the title of EXTREME Chef during the first season of the series on Food Network. Since winning the Ice House episode, LJ has been using his extreme culinary expertise in school kitchens. Working with lunch teachers that are passionate about providing students with high quality, scratch food, LJ has found a niche. He gets to use his teaching skill set with the lunch teacher, all the while tempting students to try new foods. In addition to LJ’s work with school food programs, he taught at the collegiate level, served as director at a culinary arts institute, and worked as a corporate chef. Klink educates with humor, entertainment, and charm in his quest to teach everyone to enjoy the why’s and how’s of cooking.

He holds several professional designations including Certified Executive Chef from the American Culinary Federation. He also holds a Master Certified Food Executive designation and Certified Food Service Educator designation. Chef LJ Klink is the owner of LuckJunky Consulting (
